Alderley Edge Hotel is the flagship property of the JW Lees family. As part of a major refurbishment that included a new dining room extension, Vision Commercial Kitchens was appointed to redesign and renovate the kitchen facilities. The goal was to create a more efficient layout with updated equipment to support menu development, faster service, and reduced running costs.
Our brief
The kitchen was designed around two main areas: a bakery at the back and the main kitchen at the front. A key feature of the new layout was the introduction of a service hatch, helping to create a more informal ambiance and improve service flow.
The centrepiece of the installation was a Josper Grill, enabling the hotel to launch a new grill menu as part of its enhanced food offer.


Designing within budget
Working within budget constraints, Vision incorporated a mix of new and existing equipment. Refrigeration, burner top ovens, and a new extraction system from Inox were installed, while selected items of existing equipment were deep-cleaned and refurbished before being reinstated. The final design ensured a uniform and modern appearance despite the combination of old and new equipment.
Installation and handover
Installation took place in November, with equipment stored and prepared at Vision’s warehouse during the refurbishment works. The project was completed in time for the hotel to reopen at the start of December, ensuring the new kitchen was operational for the busy Christmas period.
Both the client and head chef were extremely pleased with the results, describing the kitchen as a workhorse that now complements the front-of-house space perfectly.
