Vision Commercial Kitchens designed and delivered five new catering offers within the redeveloped East Midlands Airport: Castle Rock, Flat White, Leon, Grab and Fly, and Pork & Pickle. The brief combined franchise brands with unique concepts, all designed to cope with intense, time-compressed trading peaks in an airport environment.
Brief & scope
The airport required five distinct food and drink outlets, two from established franchises and three unique concepts. Each unit needed layouts, equipment and storage that could handle high sales volumes, with clear service routes and robust back-of-house support.


Design for peak demand
Given limited footprints and condensed trading periods, Vision specified equipment and layouts to enable pre-prep, cook and hold workflows on key menu items. High drinks throughput was planned for with appropriate storage for cask ales and traditional draught beers, alongside expanded chilled, frozen and ambient storage for food.
Programme & coordination
Delivery took place across five simultaneous sites over four months, requiring tight coordination. At one critical stage, three units on a new mezzanine level were handed over together for trade, aligning suppliers, contractors and airport controls to meet opening deadlines. All five outlets were completed to a consistent standard, with kitchens specified to meet very high peak demand.
